There are two kinds of people in this world – sliders people and not-sliders people.

I am a sliders girl! I love full-sized meals as much as the next person, but I had a burger for lunch the other day, and I could easily have fallen asleep during the next several hours. It was somewhat comical! Ever since I was a kid, I have absolutely loved sliders. I think it probably originated at all of the Bar/Bat Mitzvahs and Sweet Sixteens I went to in the NJ/NY area. Have you ever had the pleasure? There’s always a kids menu with kid-sized appetizers and meals. I’m talking little hot dogs, little pizzas, and of course, little burgers. Now my pork sliders are big kid/adult food. The marinated pork flavor is SO BIG!

You can dress them up with my spicy slaw, or you can be like half of my family and have lettuce, tomatoes and Dijon mustard. We had a pretty even split. I am sharing my spicy slaw recipe anyway, because I think you can take it too!

Life is busy lately, no doubt. When I thought it was busy before, I was never factoring in what it would be like with two kids in school. Luckily, homework hasn’t started yet but I’m predicting it will get even more hectic around here in October. We need to utilize our favorite 30-minute dinners. Scarlet gets so hungry after track practice that I have to be able to make something filling and fast. That’s where Smithfield® Marinated Fresh Pork comes in! You don’t need anything else! You also don’t have to look beyond getting great quality meat right in your local Walmart meat department. In my family we’re pretty evenly split on toasting the sliders buns or not. It’s the same way we’re split on spicy slaw or lettuce and tomato. Of course, you can also do all of the above too! There’s no limits to your sliders. I love mustard!

That said, the amazing pork tenderloin flavor is enough for me! Another great trick is that repurposing the leftovers of this meal helps us save money and time. I take extra slices (medallions) of tenderloin and scramble it into eggs. YUM.

Marinated Pork Sliders and Spicy Slaw

Ingredients

  1. 1 package Smithfield Roasted Garlic & Cracked Peppercorn Tenderloin
  2. 1 package sliders rolls, halved and lightly toasted
  3. 6 Romaine lettuce leaves
  4. 2 tomatoes, sliced
  5. Dijon mustard
  6. For the spicy slaw:
  7. 1 tbsp. spicy mustard
  8. ⅓ cup mayo
  9. 1 tbsp. pickle juice
  10. 3-4 tbsp. white wine vinegar
  11. 1 tbsp. sugar
  12. 1/2 tsp. salt
  13. 1/2 tsp. pepper
  14. 3 cups red cabbage, chopped thin
  15. 2 cups green cabbage, chopped thin
  16. 1 cup broccoli stems, sliced thin

Instructions

  • 1. Preheat over to 375°
  • 2. Heat a large cast iron skillet over medium high on the stove and place the pork tenderloin in the hot skillet
  • 3. Take a minute to sear all sides (30-60 seconds per side)
  • 4. Place your skillet in the oven and roast the pork for about 25 minutes
  • 5. Check to see that the pork has an internal temperature of 145°F.
  • 6. Let the pork tenderloin cool for about five minutes
  • 7. Slice it to your own desired thickness
  • 8. Place a layer of pork slice on the bottom bun of your sliders
  • 9. Layer with lettuce, tomatoes and Dijon mustard, or spicy slaw
  • 10. Enjoy!
  • For the spicy slaw:
  • 1. In a large bowl, mix together mayo, spicy mustard, pickle juice, vinegar, sugar, salt, and pepper
  • 2. Add in cabbages and broccoli and toss the slaw to coat thoroughly

It’s hard to fathom that we are only a few weeks from back-to-school time!

And really, it’s already back-to-school time. This has been our quickest summer vacation I think I can ever recall. My kids were still in school until the end of June and this is the first time that they’ll go back to school BEFORE Labor Day. It’s unheard of in New England! We’ve been passing every milestone from June until now. Des graduated preschool, hot on the heels of his fifth birthday. Scarlet celebrated her eighth birthday, and then we headed to Cape Cod for our summer trip.

The thing is, I’ve been somewhat nervous for this particular back-to-school. With Des starting kindergarten and Scarlet starting third grade, it will be the first time I have two kids in one school. Two lunches to pack and two after-school schedules to manage. I’m someone who gets through some anxiety and apprehension with preparation and organization. It’s how my brain works best! I’m already seeking back-to-school meal solutions, and I’m not just nervous – I’m excited for this opportunity to have two kids in the same school with the same drop-off and pick-up times. I’ll use the new time wisely!

My schoolteacher brother inspired the recipe I have here today. He came to visit a few years ago and made dinner for all of us. He only had one kid at the time – my nephew, Andrew – but they’ll be expecting their third this fall. I’d like to believe he will be making this amazing meal for his whole family. I can’t make it without thinking of him! This is my favorite easy, quick weeknight meal – and I use the best of two worlds – chicken pot pies AND Campbell’s® Condensed Chicken Noodle Soup – making Chicken NOODLE Pot Pies! Not only that, you can serve them in individual ramekins for a fun family experience.

Individual Chicken Noodle Pot Pies

Prep Time: 10 minutes

Cook Time: 35 minutes

Total Time: 45 minutes

Yield: 4 servings

Serving Size: 1 ramekin

Individual Chicken Noodle Pot Pies

Ingredients

  1. 1 can Campbell's® Condensed Chicken Noodle Soup
  2. 1 package (two ct) of pie crust dough
  3. 1/2 can Campbell's® Condensed Cream of Celery
  4. 1 package frozen vegetables
  5. 1 cup celery, chopped
  6. 2 cups cubed cooked chicken (we use rotisserie)
  7. 1 egg
  8. Salt & Pepper to taste

Instructions

  • 1. Heat oven to 400ºF
  • 2. Cut pie crust dough to line four ramekins and brush egg wash over it
  • 3. Bake for 10 minutes
  • 4. Cut four other pieces for the top of the pies
  • 5. Meanwhile, cook celery, soups, frozen vegetables, and cooked chicken in a large skillet until bubbly and thawed
  • 6. Add salt and pepper
  • 7. Spoon mixture into ramekins and cover with remaining pie crust pieces
  • 8. Brush tops with egg wash
  • 9. Using a sharp knife, cut several slits in the top crusts
  • 10. Bake for 25 minutes or until crust is golden brown
