Beach Days Jello Cups

Checking in here – this is the first day of gorgeous May weather for us. And I mean gorgeous.

Warmer than that and we’re already thinking about the beach. Although if you read my post earlier today, the beach is already on my mind. This recipe, though. It’s adorable. We can agree that sunny and 75 with low humidity and only puffy clouds in the sky is pretty amazing, right? And can we also agree that these are adorable. They’re almost too cute to eat.

I’ll make do, though. Right now is a crazy month – with work being at its peak busiest. Then there are field trips and field days, preschool conferences and kindergarten buddy days. I’m feeling a bit overwrought. What I’m thinking about is relaxing by the beach. I’m thinking about cool blue water, slower breaths, and slower paces. I’m thinking it’s a goal to achieve.

There’s always time for the crazy. Let’s make time for the chill:

Beach Days Jell-O Cups

What You Need:

2- 3oz. boxes Jell-O, Berry Blue Flavor
1 pkg. Honey Teddy Grahams
2 boxes Rainbow Nerds
10 Clear Plastic Cups
1 pkg. Gummy Lifesavers
1 pkg. Airheads Extreme Sourfuls
5 Drink Umbrellas
Black Edible Marker
Optional: Gummy fish/Gummy Sharks

What You Do:

  1. Prepare Jell-O according to package directions.
  2. Pour about 3-4 tablespoons of nerds into 5 plastic cups.
  3. Place an empty cup into each of the cups with nerds, and place a gummy fish down in each cup if you would like.
  4. Pour Jell-O into each of the 5 cups, and fill within 1/2 inch from the top.
  5. Refrigerate for 3 hours or until gelatin is set.
  6. Use the Lifesavers and Airheads as floats to put on top of your blue gelatin water, and put the Teddy Grahams on the floats. (Make sure to put the Teddy Graham inside the lifesaver before you place it on the jello). Place an umbrella into each cup as well.
  7. The nerds resemble rocks in the ocean while under the blue gelatin cups, but they can be added to the Jell-O to eat or just by themselves.
  8. Use Black Edible Marker to paint “sunglasses” on the bears!

Adorable & Tasty Mini Pop Tarts

Today, I have a major case of the Mondays. I know I always do, but it dawned overcast and 53 degrees today. In May! Then there was the slight matter of Des getting his head stuck in our coffee table. He’s fine, save for a bruised ego and a red chin. Now I sit here, and realize it’s time to bring out the big guns. Homemade Pop Tarts.

How could you not, right? We had an awesome weekend, as usual, but this one was bigger than most. On Friday night, we got a sitter for Des and took Scarlet to see Guardians of the Galaxy 2. I don’t want to ruin it for anyone, but I liked it even more than the original, and the original was pretty darn amazing. Remember when Cassidy made a DIY, homemade Groot costume, and Scarlet dressed up as Rocket Raccoon? Surely, you DO remember?

I’ll refresh your memory anyway.

No spoilers. Gosh, this is hard. Well, it’s AS funny as the original and quite possibly even more funny. I love that it got me in the heart. I have father issues, somewhat similar to Peter Quill’s, and also not AT ALL, but just work with me here. This movie made me laugh and cry and reach for Scarlet’s hand. What more do you need in life?

Also, there were Gummi Bears in her hand, so what more could you need? Well, Mini Pop Tarts.

On Saturday, we had our little city’s annual Pride Parade & Rally. There was nothing little about it, and I’ll update about that in an entirely different post. There will be as much color there, as there is here today. More!

Sunday was on the gloomier side with weather, but my father-in-law joined us for a delicious breakfast at Silver Spoon and helped Cassidy garden for hours. Then we all just.. got stuff done. Lots of home/work stuff.

The suspense has gone on long enough, so here’s the recipe. Let me know if you have any questions, and please show me pictures if you successfully make them! And, if they last long enough to take pictures. They go fast!

  1. 1 pkg. Pillsbury Pie Crusts
  2. 1 Can Strawberry Pie Filling
  3. 1 Can Vanilla Frosting
  4. Food Coloring
  5. Sprinkles and Jimmies


  • 1. Preheat oven to 350 degrees
  • 2. Take both round pieces of pie crusts and trim off the edges so you have two square pieces the same size
  • 3. Divide the frosting into three small bowls and mix food coloring into two of the bowls with your choice of color, and leave one bowl of frosting white
  • 4. On one piece of your pie crust, take a teaspoon and put dollops of pie filling - you can fit 24-30 dollops on the crust
  • 5. Place the other piece of crust on top of this one and cut the dough in strips about ¼ inch from each edge of the dollops of pie filling
  • 6. You can see the pie filling through the dough so this is easy to do
  • 7. Using a fork, press along the edges to seal the two sheets of dough together around the edges of the filling
  • 8. Then cut strips the other direction so now you have individual little filled pieces, and press the fork along the other edges to seal together
  • 9. Place the little mini pop tarts on a cookie tray and put a tiny cut into the top of each tart
  • 10. Bake for 8-10 minutes or until edges are lightly browned
  • 11. Let cool
  • 12. Frost each pop tart and sprinkle with sprinkles
  • 13. Enjoy!
