There’s something special to be said about fall baking for sure. Is it the delicious smells wafting from a warm oven on a cool night? Maybe it’s the constant occasions to get together with friends and family, potlucks and parties, or that back to school season begins. For me it’s about early sunsets and the fading sounds of lawnmowers and children’s laughter out in the yard. While I struggle against the end of summer, sometimes I power through with feel-good activities with my kids or alone.
The thing is, baking isn’t always easy but it CAN be. We discovered something pretty awesome about our favorite frosting. It got easier! We get our NEW Pillsbury™ Filled Pastry Bags from Stop & Shop. This is a new essential for our household, and let me count the ways how! In fact, this really does call for a list of why I love the new Pastry Bags:

6 – It’s so easy to use! It has a built-in star tip and you can decorate in three fun designs – stars, rosettes, and waves. I can tell you how to use it in three easy ways: 1. First, push the frosting toward the star tip and twist the top of the Filled Pastry Bag. 2. If it’s not already removed, remove the plastic cover from the star tip by tearing at the perforation. 3. Squeeze from the top of the Pastry Bag to frost your cookies, cupcakes, cakes, etc! Here’s my homemade Funfetti Cupcake recipe:
- 1 2/3 cups flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 stick unsalted butter, melted
- 1 cup sugar
- 1 large egg
- 1/4 cup vanilla yogurt
- 3/4 cup milk
- 2 tsp vanilla extract
- 1/2 cup rainbow sprinkles
- 1. Preheat oven to 350
- 2. Line a cupcake pan with paper liners and set aside
- 3. In a mixer or a large bowl, add flour, sugar, baking powder and salt
- 4. Mix for one minute and then set mixer to low, if using stand mixer
- 5. Add butter and then egg and milk and vanilla and yogurt
- 6. Add sprinkles and gently stir
- 7. Fill the cupcake liners about 2/3 full
- 8. Bake for 15-20 minutes, until it passes the "clean toothpick" test
- 9. Cool in pan.
- 10. Enjoy!
My favorite part of this recipe has always been the sprinkles. That changed when I discovered Pastry Bags. Now, I can finally get that professional looking frosting top instead of my usual smearing on frosting with a butter knife. Bonus that Scarlet can help too. A secret step I learned about through using these Pastry Bags is the secret surprise ending. When the cupcakes are soft and cooled, you can use the star tip of the frosting to gently dip into the cupcake and fill it, and then you can do the top.
That’s my little “secret” for getting those surprise filling cupcakes. Homemade Funfetti is already pretty special with its soft, cupcakey goodness and its rainbow sprinkles. Adding a surprise inside and a gorgeous topping is my favorite.
