Ahh, fall. What does it make you think about? Flannel shirts, pumpkin coffee, soup, and fall baking? Yes, me too.

There’s something special to be said about fall baking for sure. Is it the delicious smells wafting from a warm oven on a cool night? Maybe it’s the constant occasions to get together with friends and family, potlucks and parties, or that back to school season begins. For me it’s about early sunsets and the fading sounds of lawnmowers and children’s laughter out in the yard. While I struggle against the end of summer, sometimes I power through with feel-good activities with my kids or alone.

Alone IS good, but what’s better than baking with my #1 girl?

First, push the frosting toward the star tip and twist the top of the Filled Pastry Bag. 2. If it’s not already removed, remove the plastic cover from the star tip by tearing at the perforation. 3. Squeeze from the top of the Pastry Bag to frost your cookies, cupcakes, cakes, etc! Here’s my homemade Funfetti Cupcake recipe:

Homemade Funfetti Cupcakes

Ingredients

  1. 1 2/3 cups flour
  2. 1/2 tsp baking powder
  3. 1/4 tsp baking soda
  4. 1/4 tsp salt
  5. 1 stick unsalted butter, melted
  6. 1 cup sugar
  7. 1 large egg
  8. 1/4 cup vanilla yogurt
  9. 3/4 cup milk
  10. 2 tsp vanilla extract
  11. 1/2 cup rainbow sprinkles

Instructions

  • 1. Preheat oven to 350
  • 2. Line a cupcake pan with paper liners and set aside
  • 3. In a mixer or a large bowl, add flour, sugar, baking powder and salt
  • 4. Mix for one minute and then set mixer to low, if using stand mixer
  • 5. Add butter and then egg and milk and vanilla and yogurt
  • 6. Add sprinkles and gently stir
  • 7. Fill the cupcake liners about 2/3 full
  • 8. Bake for 15-20 minutes, until it passes the "clean toothpick" test
  • 9. Cool in pan.
  • 10. Enjoy!

My favorite part of this recipe has always been the sprinkles. That changed when I discovered Pastry Bags. Now, I can finally get that professional looking frosting top instead of my usual smearing on frosting with a butter knife. Bonus that Scarlet can help too. A secret step I learned about through using these Pastry Bags is the secret surprise ending. When the cupcakes are soft and cooled, you can use the star tip of the frosting to gently dip into the cupcake and fill it, and then you can do the top.

That’s my little “secret” for getting those surprise filling cupcakes. Homemade Funfetti is already pretty special with its soft, cupcakey goodness and its rainbow sprinkles. Adding a surprise inside and a gorgeous topping is my favorite.

  1. Omg, I so need these pastry bags as I am terrible at frosting cupcakes. N/o joke for Lily’s birthday party last year I had to ice 4 dozen Blue (Icing) Funfetti cupcakes for her Moana movie themed party. Seriously my icing was atrocious. So next time out, I am looking for these as your icing came out so pretty and neat, too 🙂

  2. I’ve always wanted to use one of those pastry bags!!! This looks super easy/foolproof which is great because baking has never really been my bag, if you catch my drift 🙂

    I love that you have a secret way to get some filling inside the cupcake! I love cupcake anything so that’s probably what I would want to make, too 🙂
