Double Butterfinger Brownie Bites

It occurred to me over the weekend that Friday was our official halfway point of summer.

I see the half glass full, as August is our month of going back to Cape Cod, going to Alaska, seeing friends who have moved away, seeing Toad the Wet Sprocket in concert (hi, 1994!), two more weeks of summer camp, and dates with loved ones. I can barely keep track, but luckily, it’s stored on my Google calendar. Luckily also, I have a perfect recipe for everything.

Year-round, and easy to make, my Double Butterfinger Brownie Bites are simple, fun, and also unique.

It’s easy enough to make, especially if you follow the directions on your Nestle Toll House Baking Mix package. For us, that’s Brownies & More with Butterfingers, because I also like to put a Buttefinger surprise in the inside. The thing is, this recipe can conceivably be followed for all four varieties of baking mixes: Brownies & More with Butterfingers, Brownies & More with chocolate morsels, Cookies & More with Butterfingers, Cookies & More with chocolate morsels. The wonders!

If you can bake it, round it into balls with a surprise center, and then dip it into chocolates and sprinkles, I want IN!

Found at Target, otherwise known as my family’s second home, I found all four baking mixes in the Baking Aisle, under the Baking Mixes sign. I couldn’t decide between one or two flavors, so I got all four. I know we will use them all for baking.

Baking is one of life’s greatest joys and challenges for me. I spend a lot of my time eating baked goods and trying to figure out how to make them better. For me, that includes simple recipes, filled with surprises for my people, and are easy to serve.

I am able to get other things done while they bake, and also while they are chilling in the fridge.

Nestle Toll House Baking Mixes inspire me to get more creative in the kitchen, because they take away a lot of the mess and guesswork. I think they are versatile and customizable, and I like that I can use all four for one of my favorite recipes. The brownie bites would be just as excellent as cookie bites, and you can also choose your own surprise middles!

Double Butterfinger Brownie Bites

Prep Time: 1 hour, 35 minutes

Cook Time: 25 minutes

Total Time: 2 hours

Double Butterfinger Brownie Bites

These brownie bites are baked, chilled, dipped in chocolate and sprinkles, and enjoyed - all with a special Butterfinger surprise on the inside!


  • Butterfinger Bites or Butterfinger Peanut Butter Cups Minis
  • NESTLÉ® TOLL HOUSE® Brownies & More with Butterfingers Baking Mix
  • Melting chocolate of any kind
  • Sprinkles (optional)


  1. Bake NESTLÉ® TOLL HOUSE® Brownies & More with Butterfingers Baking Mix, according to the instructions on the box.
  2. Let them cool for 10-15 minutes.
  3. Cut them into small squares, place a surprise Butterfinger Bites or Butterfinger Peanut Butter Cups Mini inside, round them into a ball, and place them on a wax paper covered baking sheet.
  4. Let them chill for at least an hour.
  5. Melt the chocolate, dip the brownie bites in, and then use sprinkles.
  6. Let cool in the fridge.
  7. Enjoy!

  3. You’re very creative with these! Our summer camp is only for two more weeks too. I’m not a summer person, but it is sort of sad to say goodbye to these relaxing days when we can take them to camp any time.

    • This is Scarlet’s last week of camp. Sob! I can sign her up for other weeks, but with Alaska coming, I sort of want to spend time with her as well. She’s hard to entertain, though! Des is more go-with-the-flow, and Scarlet wants endless entertainment.

    I love your attitude about August. I’m pretty much the opposite — I’m “eek, summer is almost ooooooverrrrrrr!” pout pout pout. Although this year we’re going on a Cape May vacation with my parents after Labor Day, so I suppose our summer is extended a little longer.

    • I hear you. With Alaska coming, it seems like we still have so much summer. On the other hand, when we get back, we will only have a week or two left of summer. Truly. Eeek!

  9. These looks amazing! This is a project for the Granddaughters this week. I have them two afternoons and it’s too hot to be outside so we bake. I can’t believe Toad the Wet Sprocket is still around. One of my friends dated the drummer long ago and we would go to the concerts – that is a blast from the past!
