It’s so nice out today, that I simply have to tell you how I like to BBQ – with slow cooker Hawaiian Chicken!

This is one of my favorite recipes of all time, and we all know the ample opportunities to party this time of year. Whether it’s graduation, Mother’s Day, Father’s Day, Memorial Day, Fourth of July, birthday, backyard wedding, National Pet Day (yes, really), National Hawaiian Pulled Chicken Day (I made that one up), or just ’cause it’s so nice out and we want to party, there’s always an occasion for Hawaiian BBQ Pulled Chicken Sandwiches. Crockpot Hawaiian Chicken makes the house smell so amazing! Also I love when people walk into our house and ask, “What’s that smell? It smells absolutely divine.”

It’s Slow Cooker Hawaiian Chicken, of course!

Slow Cooker Hawaiian BBQ Chicken Sandwiches


3-4 lbs. Chicken Breasts
16 oz. Prepared Coleslaw
1 ½ cups Barbecue Sauce
2 cups Pineapple Juice
1 cup Brown Sugar
1 tsp. Minced Garlic
2 tsp. Salt
1 Tbsp. Worcestershire Sauce
1 Onion sliced
2 Tbsp. flour, optional

BBQ Pulled Chicken


1 – Place all the ingredients, except the chicken & onion, in a bowl and mix well

2 – Put the chicken and onion in a crockpot and pour the sauce over it. Cook on high for 4-5 hours

3 – Once chicken is cooked through, remove it and shred it

4 – If you would like to thicken the sauce a little, you can add the flour to the sauce and mix well

5 – Add back in the shredded chicken and let cook for about another hour to let the sauce thicken up

6 – Once it is done, place a heaping spoonful on a bun and top with coleslaw

7 – Enjoy!

I have to tell you – I remember exactly where I was the first time I had quinoa.

Well, maybe I don’t remember EXACTLY where it was, because the name of the park escapes me, but I remember the feeling, the sensation, the intrigue. I was in San Francisco, and I had moved there not long before this summer barbecue. Everyone brought a dish, but I can’t remember what we brought! My friend, Tina, brought a quinoa salad. I remember that she was trying to tell me how to pronounce AND spell it – and then she gave up and told me to eat it. So, of course, I did.

Then, that experience was colored by the fact that our elderly husky, Stormy, was scratched in the eye by another dog. And we then had to leave the potluck summer barbecue to find a weekend-hours vet, but the point is, I remember the quinoa! And while I may have been intimidated then, by what it was and how to best prepare it, I’m so glad I know now that it’s easy to get great results! For a recent summer weekend barbecue, I wanted to emulate that first time I had quinoa.

I had to put my own twist on the quinoa salad theme, though. I talk about tacos and Mexican food here quite a bit, in case you haven’t noticed. I thought about how delicious it would be to make a quinoa taco salad. Intriguing, no?

Aside from my friend, Tina, and her quinoa salad in San Francisco, I need to tell you a quick taco salad story! Our school cafeteria served taco salad. I can’t remember if it was once a month, twice a month, or once a week, but people would get obsessed with it. In my shared homeroom classroom sophomore year, a student would write a little countdown on the side chalkboard: “10 days to HTSD (Hot Taco Salad Day)”, etc. Then he or she would cross out the 10, and switch it to 9, and so on. The best part was that ON HTSD, they’d write, “Happy Hot Taco Salad Day!” I so applaud that festive foodie spirit.

And that’s why I’m bringing you this recipe today – inspired by many walks of life – but ultimately all mine.

Quinoa Taco Salad

Quinoa Taco Salad


  1. 2 bags Success® Quinoa
  2. 1/4 cup lime juice
  3. 1 tsp chili powder
  4. 1/2 tsp cayenne pepper
  5. 1/2 tsp cumin
  6. 1/2 tsp paprika
  7. 1/2 tsp salt
  8. 1 avocado
  9. 1 large tomato, diced
  10. 2 cups black beans
  11. 2 cups canned corn
  12. 1 cup red pepper, chopped
  13. 4 small corn tortilla (optional)
  14. Sour cream/lime juice glaze on top (optional)


  • 1. Prepare the Success® Tri-Color 100% Quinoa according to instructions on box.
  • 2. In a small box, mix lime juice with chili powder, cayenne powder, cumin, paprika and salt, and set aside.
  • 3. In a larger bowl, combine the quinoa, avocado, tomatoes, black beans, corn, and peppers.
  • 4. Stir in the spice/lime juice mix and toss it evenly throughout the quinoa.
  • 5. You may need a pinch more salt/lime juice.
  • 6. Top with more avocado.
  • 7. Top with crushed tortilla chips.
  • 8. Top with either hot sauce or a sour cream based dressing.
  • 9. Enjoy!
