Sorry I didn’t check in yesterday! The sick has hit us!

The kids hadn’t been sick since early 2017, and I’m not even positive about that! I know that Des has three absences this year, and all three were days spent in Florida. Scarlet has five absences (or had, anyway) and three were spent in Florida, one was spent in NYC with Cassidy, and there was also the day we took her out of school to see the new Star Wars! Priorities, and all. I really thought we had made it, not only to spring, but to the “safe” zone. April used to be “safe?”

I know you’re never really safe but when you first have kids, they get sick quite a bit, in my opinion. It really does slow and die down the way it does for most adults. Scarlet woke up yesterday with a fever of 103. Today, she woke up with a fever of 103 and Des with a fever of 102. Oh boy! I wanted to check in and share this AMAZING and easy (good for sick days) recipe, but I’ll have to duck out again too. Before I do that, though, there’s something I’ve been meaning to confess for a long time.

My sister has put that photo on Facebook for YEARS, and I’ve ducked my head and forgotten about it. Now it’s time to embrace it. Do you have any photos with early 90’s hair, track jackets, and blue eye shadow? I definitely need to see them! The only thing I’ll say in my defense is that I had a high fever that night. I remember that my parents took us to the school to get our portraits taken. Maybe it was a fundraiser. After that, I seem to remember going to Temple and nearly falling asleep. Somehow I made it home. The fever doesn’t excuse my outfit, my hair, and my blue eye shadow. Those proudly belong to me. It does explain the strained smile, though. Cheerio! Here’s to fevers then, fevers now, and Zucchini Boats!

Zucchini Boats

Ingredients:

3-4 Zucchini
1 (15 oz.) can black beans, drained and rinsed
½ red onion, diced
¾ cup frozen corn
1 cup shredded Italian cheese (reserve ¼ cup for the top)
1 jalapeno, diced
¼ cup cilantro (optional because I can’t stand it)
1 red bell pepper, diced
½ tsp. garlic powder
½ tsp. chili powder
2 Tbsp. olive oil
Dash of salt

Directions:

1 – Preheat oven to 350 degrees

2 – Cut each zucchini in half lengthwise and scoop out about half the insides with a spoon

3 – Mix the rest of the ingredients together in a bowl. Make sure to reserve the ¼ cup of cheese for the tops

4 – Fill each zucchini boat with some of the mixture. I had some extra mixture, so I just filled a few extra zucchinis I had

5 – Place the boats on a baking sheet and bake for about 15 minutes or until heated through and the zucchini has softened

6 – Remove from the oven and sprinkle the reserved cheese over the tops of the boats

7 – Serve immediately
