I know, I know – the salad title is a mouthful.

Don’t eat.” This will not stop your family members. And I can all but assure you that if you bring this salad to a summer get-together or party, you’ll be returning home with an empty bowl.

What makes it so good? It’s partly picking your vegetables from your own garden, and barring that, getting fresh ones from a great source. We are growing kale like crazy right now and can’t possibly use it for anything less than PERFECT.

Lemon Kale Avocado Summer Chop Salad

Lemon Kale Avocado Summer Chop Salad

Ingredients

  1. For the salad:
  2. Reese Medallion Cut Hearts of Palm
  3. Reese Quartered Artichoke Hearts
  4. 2 cups kale - chopped (de-stemmed)
  5. 1 lemon - juiced and strained
  6. 1 tbsp extra virgin olive oil
  7. 1/4 tsp salt
  8. 1-2 ripe avocados
  9. 1 cup quinoa - cooked or crunchy
  10. broccoli, red cabbage, carrots, radicchio
  11. pumpkin seeds, sunflower seeds
  12. For the Lemon Poppy Seed Dressing:
  13. 2 tbsp olive oil
  14. 2 tbsp fresh lemon juice
  15. 1 tsp honey or sugar
  16. 1/2 tsp poppy seeds
  17. 1/8 tsp salt
  18. 1/8 tsp pepper

Instructions

  • 1. Chop your kale and put it in a large bowl
  • 2. Then coat it with lemon juice and let sit for 5 minutes
  • 3. Add olive oil, salt, avocado, quinoa and seeds to the salad
  • 4. Add Reese Medallion Cut Hearts of Palm and Reese Quartered Artichoke Hearts, as well as (optional) broccoli, cabbage, carrots, and radicchio
  • 5. For the dressing, combine olive oil, lemon, honey (or sugar), poppy seeds, salt and pepper
  • 6. Shake until mixed well
  • 7. Pour over the salad and toss to coat

So, why not date? Date your significant other, as if it’s new and as if you’re just met. Date yourself new again. With summer here, the options are endless and fun. My ideas take on a bit of a playful motif, but that’s because of who we are at heart, and what we love about each other most. You have to make your own schedule based on your own interests, needs and resources. You can stay home or go out. Do you need a babysitter? If you can get a sitter only in the afternoons, or only at night, or if you can’t get one at all – factor these needs in. 4 – See a movie at the Drive-In. We actually have two near us, but it might require a search.

5 – Go to a fair or festival. It’s a little like being a kid again, and it’s a LOT romantic. Fried butter and all.

6 – Go mini golfing. Gosh, I love mini golfing. And gosh, I’m terrible at it! I still love it.

7 – Go to a special place to catch a sunset together. Or sunrise! Bonus points for that one.
